Healthy Pumpkin Spice Muffins

I have been experimenting with pumpkin and pumpkin spice and love these healthy pumpkin muffins. Give them a try, maybe even enjoy them with a pumpkin spice latte? You can find that recipe on my Instagram feed @eatright_rd, just click here!
Ingredients:
1 cup rolled oats
1 cup whole wheat flour
2-3 tbsp. hemp seeds (optional)
2 tsp. baking powder
1 tbsp. pumpkin spice
2 eggs
¼ cup coconut oil, melted
½ cup coconut or plain Greek yogurt
1 cup pumpkin puree
3 tbsp. maple syrup
Dark chocolate chips to your liking (can also be raisins)
Directions:
Preheat oven to 350F
In a bowl combine all wet ingredients, eggs, melted coconut oil, yogurt, maple syrup, and pumpkin puree.
In a separate bowl combine all the dry ingredients, oats, whole wheat flour, hemp seeds, baking powder, and pumpkin spice.
Pour wet ingredients over dry and mix together well. Note: it will be a thick batter.
Scoop batter into lined or greased muffin tins.
Bake for 25-30 minutes and enjoy!
Store in fridge for 4 days or on counter for 1-2. They also freeze well, so package some up and save them for a cool fall day.
