5 Ways to Reduce Food Waste in your Home and Eat Healthy

We have a food waste problem in Canada and it’s a huge one. So huge that it’s referred to as a $31-billion-dollar problem. [i]Across Canada we are wasting $31 billion dollars of food, which is 40% of food purchased yearly…..almost half! In addition, research has suggested that we are wasting approximately 396 kilograms of food per capita annually and an average of $28 of food each week per household (that’s almost $1500 a year)! [ii] We often think the food industry produces most of the waste, but did you know that 47% of food wasted in Canada occurs at the household level? The worst part is 80% of this food wasted was once perfectly edible, meaning we have let it waste or deteriorate on the

Chewy Oatmeal Pumpkin Cookies

If you've been following the Eat Right Feel Right blog or social media pages for a while now then you know I am the queen of treats....healthy treats of course. I love nothing more than a warm cookie fresh out of the oven. I love it even more when the freshly baked treat is actually healthy too! So, I have made it my mission to create incredibly delicious but also healthy treats. I typically like to recipe test on a Sunday, unfortunately if my meals or goodies don't turn out good my family gets stuck eating them. I don't like to waste food, so it's a good thing I have a dog who loves everything I make. Today was big success because these cookies turned out amazing. I should mention they are

Maple Blueberry Granola

It's almost officially fall, yet the weather is still holding on to summer (at least for one more day). I don't know about you, but I am ready to wear ankle boots, scarves and sweaters. Who's with me? This delicious granola mixes the fall maple flavour with some summer berry vibes, perfect for those wishing for fall weather (like me) and those of you still holding on to the summer. I usually enjoy my granola sprinkled on Greek or coconut yogurt. I also use it on baked apples, as it makes for a healthy and tasty sweet treat this time of year. Granola can contain a lot of great ingredients like oats, seeds, and nuts, but it also typically contains some form of added sugar. I used maple butter

Nonna's Vegetarian Stuffed Eggplants

The summer is coming to an end but there are still tons of garden veggies available. Lately, I have had an abundance of eggplants. I absolutely love eggplants (almost in any form) but these stuffed vegetarian eggplants are perfection. Today I am sharing a childhood favourite, my nonna's stuffed eggplants! They bring back many great memories of family, cooking, and gardening with my nonno. What makes eggplants so great? Rich in antioxidants like anthocyanins, which help support heart health and reduce inflammation in the body Low in calories “Meaty” texture, great for vegetarian meals Rich in fibre These eggplants are a great vegetarian meal option, perfect for the entire family. Give them a

Quick Veggie Stir Fry

I love making good food taste delicious. I love it even more when it is quick and easy to make. Here is a quick and easy stir-fry that tastes like take-out (amazing). I seriously can't get enough! It is also loaded with veggies and lean protein, providing you with nutrients such as vitamin C, fibre, vitamin A, and lots of fibre! Serves ~3-4. I like to double the recipe so I have lots of leftovers for lunches or other busy weeknight dinners! Last night's quick dinner meal (and picture). Ingredients: 500 g ground turkey 1 bag Mann's veggies (I used a cabbage, kohlrabi, golden beet, and kale blend - but feel free to use any blend) 1/3 cup coconut aminos (soy substitute, option to use a light s

End of Summer Veggie Stew

Here in Ontario we have been blessed with amazing summer weather and even more amazing local fruit and veggies. I have been getting so many incredible veggies from my garden, local farms, and family gardens. To be honest it has actually been a little too much, which has forced me to do A LOT of meal prep and cooking (because I really don't like food waste). One of my favourite dishes growing up was pepperonata. Pepperonata is a southern Italian inspired dish made with lots of bell peppers. My family has always made pepperonata with tons of different garden veggies and is how I continue to make it, so my recipe is a spin on this Italian classic. You can call this recipe peperonata, veggie ste
