Thai Veggie Salad

The warm weather makes it officially feel like spring and of course the sunshine helps too! This past week I hosted a workshop all about healthy skin and I served this thai salad at the workshop. It is filled with antioxidants and perfect for a healthy glow. If you like thai food or thai flavours, I encourage you to give this recipe a try. I used my newest kitchen toy the starfrit spiralizer. Spring Spinach Salad

One of my favourite things about the spring and summer months in Canada is the abundance of fresh local produce in Ontario. I am extra excited because come May Ontario spinach is available. I am a major spinach lover (sorry Kale, it's not you it's me) and I am also a huge strawberry fan (available come May as well). In fact, I have already seen some Ontario strawberries in stores! What's even better is the fact that spinach and strawberries taste fantastic together! This morning I did a segment on Daytime York Region which featured this delicious spinach salad. Farm Fresh Rutabaga Chips

I love cooking and recipe testing, especially with fresh ingredients. I am super excited to be collaborating with Mount Wolfe Forest Farm (a farm close to home and ran by a friend) to create farm fresh locally sourced recipes. This week I picked up some beautiful rutabagas and decided to recipe test by making 'rutabaga chips,' and they turned out great! I also got to use my newest kitchen toy the starfrit spiralizer (only $20 at Walmart). I am now obsessed and can't wait to spiralize more veggies! Rutabagas are an excellent source of vitamin C and potassium, they are also a good source of fibre, b vitamins, and calcium! So, munch away on these babies! Ingredients: 2 rutabagas, peeled 2 tbsp.

I don't know about you but I love sweet potatoes. They are great for you skin, and an amazing source of antioxidants and fibre. Even as a child I always preferred sweet potatoes over white ones. I remember my mom making chicken with both white and sweet potatoes, the white ones for my sister and the sweet ones for me!
