Simple Greek Quinoa Salad

Keeping it simple, healthy, and perhaps most importantly tasty.... is my type of cooking! I love creating simple and satisfying meals for all of you. It may be raining but I am feeling the sunshine with these sun inspired cookies. I have always loved the pineapple coconut combo (especially in my moms pineapple delight cake), so I thought why not try it out in cookie form! I hope you enjoy these cookies as much as I do.
