Veggie & Hummus Goat Cheese Wrap
This roasted veggie & hummus wrap is a super easy and delicious way to change up your lunch routine.
Loaded with lots of flavour and tasty veggies, it's a portable, nutritious meal option that can be whipped up in minutes.
Aside form being convenient and delicious, this recipe has lots of great health benefits as well!
Did you know that both hummus and whole wheat are great sources of fibre? These foods promote digestive health and also feed your good gut bacteria.
Note: In order to have this meal option ready to go when things are busy, I usually roast a variety of vegetables at the beginning of the week. To prepare the veggies, I sprinkle them with salt/pepper and garlic powder, toss them in olive or avocado oil and bake at 375°F for about 40 minutes. The vegetables can be used in many ways, but this makes for a very tasty lunch (I always feel like I’m eating out).
Whole grain tortilla
Roasted veggies of choice (I used baked zucchini, red peppers, eggplant and broccoli)
1️. Spread hummus on the wrap
2️. Place your roasted veggies in
3️. Sprinkle with goat cheese
