Slow Cooked Pumpkin Spice Oats

I love Sunday's especially in the fall. Colourful falling leaves, crisp air, slow mornings, and slow cooking. As soon as the weather starts to change I take every opportunity to use my slow cooker and meal prep something for the week ahead. At the moment I need meals prepped more than ever (life with a newborn), so I am especially excited about breakfast made for the week ahead.
These oats are absolutely delicious and perfect for the entire family during a busy week, give them a try and enjoy!
Slow Cooked Overnight Oats:
Serves 4-6
Ingredients:
1 3/4 cups steel cut oats
1 3/4 cups oat milk (or any milk)
1 1/2 cups pure pumpkin puree
1 tbsp. pumpkin spice
1 tsp. vanilla extract
2 tbsp. maple syrup
1 3/4 cups water
2 heaping tbsp. ground flaxseed
2 tbsp. butter or coconut oil, divided
Directions:
Grease slow cooker well with 1 tbsp. butter or coconut oil.
Place all ingredients in slow cooker and cook for 2.5 - 3 hours on high heat.
Enjoy the next morning, topped with raisins, pecans, or your choice of nuts/fruit.
*Can keep well for 4 days in the fridge
