Frozen Peach Dessert Cups

Peach season is officially here in Ontario and I enjoying every bite of it! I don’t know about you but I have been having at least one peach each day. For those of you who don’t know this, I have a big sweet tooth! Luckily our local peaches are incredibly sweet, making them the perfect snack to satisfy my sweet tooth (and hopefully some of yours too)!

I have been experimenting with peaches and sweet treats in my kitchen and came up with these delicious dairy free frozen dessert cups. They are a great way to use up some ripe peaches and enjoy a cold and refreshing treat on a hot day.

Makes 10-12 dessert cups

Ingredients:

  • 1 cup dates, pitted

  • ½ cup rolled oats

  • ¼ cup shredded coconut

  • 3 tbsp. hemp seeds

  • ½ cup almond butter, smooth or crunchy (your choice)

  • 4 ripe peaches

  • 1.5-2 cups vanilla frozen yogurt (I used vanilla bean coconut milk frozen dessert by so delicious, this is a great dairy free option).

Directions:

Combine pitted dates, rolled oats, shredded coconut, hemp seeds and almond butter in food processer. Pulse for 20-30 seconds or until ingredients are mixed together well.

Take about 1-2 tablespoons worth of the date mixture and place at the bottom of a muffin tray. Press down firmly to create your frozen dessert ‘crust’. Side note: I like to line my muffin tray with silicone muffin cups (for easy removal).

In a blender mix together 4 sliced peaches (leaving the skins on) and 1.5-2 cups of frozen vanilla yogurt.

Pour mixture over your crust and voila!

Place in freezer for at least 4 hours and enjoy!

If you have extra date mixture, roll them into balls and enjoy as a mini energy bite.
