Maple Blueberry Granola

It's almost officially fall, yet the weather is still holding on to summer (at least for one more day). I don't know about you, but I am ready to wear ankle boots, scarves and sweaters. Who's with me?

This delicious granola mixes the fall maple flavour with some summer berry vibes, perfect for those wishing for fall weather (like me) and those of you still holding on to the summer.

I usually enjoy my granola sprinkled on Greek or coconut yogurt. I also use it on baked apples, as it makes for a healthy and tasty sweet treat this time of year.

Granola can contain a lot of great ingredients like oats, seeds, and nuts, but it also typically contains some form of added sugar. I used maple butter in this batch (which is absolutely incredible), but nonetheless an added sugar.

Should you eat granola....even though there's some added sugar?

Yes, enjoy the granola with the maple butter! I suggest this because I truly believe and promote balanced eating. However, the portion you eat is important (too much added sugars, even when they come from natural sources don't do us any good). So, I typically recommend keeping your granola serving to 1/4-1/3 cup and enjoying each bite.

It might not be a food you eat daily, but something worth making room for especially if you love it as much as I do.

What's maple butter?

Maple butter is also known as maple cream or spread. Essentially it is maple syrup that has been heated and cooled at certain temperatures until it reaches a smooth but thick consistency. It makes for a great granola coating ingredient and is packed with flavour!

Makes ~ 3-4 cups of granola

Ingredients:

  • 1 cup oats

  • ½ cup slivered roasted almonds

  • ½ cup pumpkin seeds

  • 2-3 tbsp. hemp seeds (optional)

  • ½ cup maple butter

  • 2 tbsp. coconut oil, melted

  • ½-1 cup dried blueberries

Directions:

Mix all ingredients together well. Ensure the dry items are well coated.

Preheat oven to 375F

Line baking tray with parchment paper and evenly spread granola mixture on top.

Bake for 17-20 minutes or slightly browned.
