Blueberry Zucchini Muffins

It's no secret that I have a sweet tooth (or more like teeth), so I am always in the kitchen experimenting and creating tasty and healthy treats with very limited sugar.

August is one of my favourite months because there is so much local Ontario produce available. In fact, there are over 50 different local fruits and vegetables available during this month.

I have been loving fresh blueberries (especially their price) and have way too many home grown zucchinis, so I decided to combine the two in the form of my favourite baked good....muffins (see recipe below)!

What's so great about zucchinis anyway?

Zucchini is a form of summer squash. They are low in calories, with less than 20 calories in a 1 cup serving. They are rich in vitamin A, C, and fibre. You will get more than 50% of your daily required vitamin C intake by eating just one zucchini. In addition, they contain moderate amounts of iron, B vitamins, manganese, and zinc.

Bottom line: zucchinis are a hydrating vegetable that have a low calorie and carbohydrate content, while being rich in electrolytes and antioxidants.
