The summer weather has finally arrived! My favourite type of meals in the heat are colourful, fresh, and light. Who else feels the same? This past week I made these delicious chicken mango lettuce wraps and they turned out fantastic. The best part is they were completely satisfying, keeping me full for hours!
The mango salsa would also be a great topper for salmon, chicken burgers, or anything off the grill. Give it a try.
2 cups cherry tomatoes
¼ cup minced parsley or cilantro
½ red onion, minced
Lime juice (1/2 lime squeezed)
1 tbsp. honey
Option to include black pepper to taste
Peel and cube mango. Slice red onion and cherry tomatoes. Mix together cherry tomatoes, mango, cilantro or parsley, red onion, lime juice, black pepper, and honey. Set aside.
Wash romaine lettuce and peel leaves back (these will be your shells).
In a skillet on medium heat, add olive oil. Add ground chicken, minced garlic, chili powder, cumin, paprika, and salt/black pepper. Sauté for 8-10 minutes or until meat is completely cooked.
Add ground chicken mixture to lettuce and top with the cherry tomato mango salsa. Option to drizzle with some hot sauce.
