Veggie Stuffed Portobello Mushrooms

Looking for a meatless Monday meal? Give this healthy and delicious vegetarian meal a try!

Servings: 4-5

Time: 40 min

Vegetarian, Gluten free (optional)

Marinade Ingredients (30 minutes)

  • 4-5 Portobello mushrooms (de-stemmed)

  • 2 tbsp. olive oil

  • 2 tbsp. balsamic vinegar

  • ½ lime (juiced)

  • 1 tbsp. turmeric powder

  • 1 tsp. chili powder

  • 1 tsp. black pepper

  • ½ tsp. salt

Stuffing Ingredients

  • 2 Tbsp. olive oil

  • Stems of Portobello mushrooms (diced)

  • 2 cloves garlic (minced)

  • 1 small onion (diced)

  • ½ zucchini (diced)

  • 10 cherry tomatoes (halved)

  • ½ red bell pepper (diced)

  • 2 tbsp. paprika

  • Salt & pepper to taste

Directions:

  1. Place mushrooms in marinade for 30 minutes or up to 2 hours depending on preference

  2. Pre-heat oven to 400 degrees Celsius

  3. In a large skillet, allow olive oil to heat up and throw in all of the filling ingredients. Sautee for 5-7 minutes

  4. Spoon in 1-2 tbsp. of filling into each mushroom and top with your favourite breadcrumbs (gluten free breadcrumbs optional)

  5. Place stuffed mushrooms in the oven for 10 minutes

  6. Remove stuffed mushrooms from the oven and top with mozzarella cheese. Place mushrooms back in the oven for an additional 2 minutes or until cheese is melted.
