Pumpkin Pie Granola

I LOVE granola, it is definitely one of my favourite 'snacky' type foods (if you don't already know...I have a sweet tooth). I especially love it as a topping for plain yogurt or a baked apple. The best part about granola is its simplicity, it takes no time to make and only gets a couple of dishes dirty (who doesn't love that?)

The other day I was wandering around winners and I happened to find pumpkin butter (this made me way too excited). I don't know if you have ever had apple butter, but it's essentially the same thing but made from pumpkin. So I bought some an experimented with a granola recipe. I am loving the outcome.

Give this pumpkin pie granola a try the next time your craving something sweet and healthy. If you can't find pumpkin butter, check out this great recipe by the Minimalist Baker to make your very own pumpkin butter!

Ingredients:

  • 1 1/2 cups rolled oats

  • 3/4 cup slivered almonds (I like the roasted kind)

  • 2 tbsp. hemp hearts

  • 1/2 cup pumpkin butter

  • 2 tbsp. coconut oil

  • 1/3 cup dark chocolate chips (optional)

  • Sprinkle of salt

  • 1 tsp. cinnamon

  • 1 tsp. pumpkin spice

Directions:

Line baking tray with parchment paper and preheat oven at 350 F

Mix together oats, almonds, hemp hearts, salt and spices.

Add pumpkin butter, melted coconut oil and mix together.

Spread mixture evenly on baking tray and bake for 10-12 minutes or until it begins to darken.

Remove from heat, when cooled (but still warm), mix in dark chocolate chips for some added sweetness.
