Summer Burgers

I love a homemade barbecued burger in the summer. Believe it or not making homemade burgers isn't super time consuming. I typically make a big patch and then keep some stored in my freezer. Making a big batch is helpful for those busy summer nights, you can pop them out of the freezer and head straight to the grill.

 

This summer I have been using the Pampered Chef burger press to help get that perfect burger shape. It's simple to use and you can make slider sized burgers for the kiddies. It definitely is a must have kitchen tool if you enjoy summer burgers. 

 

 

The Classic Family Chicken Burger:

I grew up enjoying this recipe and still love to make it myself (I have added a few of my own touches, but it pretty much remains the same - thanks mom). Around this time of year zucchini season is in full swing, making this recipe a great way to use them up. Plus you get to up your daily veggie intake by eating a burger! 

 

Makes 6-8 patties

 

Ingredients:

  • 1 ½ lbs. ground chicken

  • 1 cup grated zucchini, drained

  • 1 cup onion, finely chopped

  • ½ cup whole wheat breadcrumbs

  • 2 tbsp. ground flaxseed (optional)

  • 3 tbsp. BBQ sauce

  • 1 tbsp. lemon juice

  • 2 tsp. soy sauce

  • ½ tsp. paprika

  • 1 tsp. oregano, dried

  • 1 tsp. hot sauce

  • Salt and black pepper to taste

 

Directions:

 

Mix all ingredients together well. Fill ½ measuring cup with the mixture and place in pampered chef burger press. Gently press down and form burger or slider. Place on parchment lined tray or plate.

Grill 5-7 minutes per side or until full cooked. Serve on your choice of burger bun and top with all your favourite toppings (I personally love sliced avocado, tomato onion, and lettuce for this burger).

If freezing, divide burgers with small piece of parchment paper and freeze in freezer safe plastic bag or Tupperware for up to 3 months.
