Herb Crusted Salmon

One of my favourite things about Canadian summer months is the abundance of fresh herbs. I think my favourite herbs are fresh parsley and basil, as they are both so versatile. I use them in pestos, bean salads, with fish, chicken, etc. I happen to have both these herbs growing in my mini garden out back, so they tend to be my go to herbs.

Recently I have been playing around with my garden herbs and discovered a herb crusted salmon. If I could describe this recipe in one word it would be...YUMMY! (Yes, it's caps lock worthy).

Salmon is rich in poly and monounsaturated fatty acids (your healthy fats and omega-3s) and it's also a great source of vitamin B12, which plays an important role in your brain functioning. This recipe uses fresh parsley and basil, both of which are great sources of antioxidants, iron, and fibre.

If you like fresh herbs and salmon definitely give this recipe a try.

Serves ~ 4


Herb Crust:

  • 2-3 tbsp. olive oil

  • ¾ cup minced fresh herbs (side note: throw some fresh parsley, stems removed and basil in food processor and mince)

  • 2 garlic cloves, finely minced

  • 1 tsp. lemon zest

  • salt and black pepper to taste

  • ¼ - ½ whole wheat bread crumbs

  • 3 tbsp. parmesan cheese, grated (optional but highly recommended)


  • 4 salmon filets


Preheat oven to 400 F

Line baking sheet with parchment paper or foil

Bake salmon filets for 10 minutes

Mix together olive oil, minced herbs, garlic, lemon zest, bread crumbs, salt and black pepper and parmesan cheese.

Remove salmon from heat and top generously with herb crust, place back in oven and continue to bake for an additional 5 minutes.
