Healthy Tropical 'Creamsicle'

Anyone who knows me knows I LOVE ice cream. It is by far my favourite sweet treat, especially in the summer. There is something so nostalgic about enjoying an ice cream cone or popsicle on a warm summer night. Lately I have been experimenting with making my own popsicles to help satisfy my sweet tooth in a healthier way. Tonight is officially the first day of summer (in Canada), so I am sharing a homemade 'creamsicle' recipe with all of you!

What you need:

Popsicle molds, you can find these at grocery stores or dollar stores. I found some BPA free ones at my local dollarama.

  • 2 cups coconut milk

  • 1 cup frozen mango

  • 1.5 cups frozen pineapple

  • 1/3 cup shredded coconut

  • 1.5 tbsp. honey

Mix coconut milk, frozen mango, pineapple, and honey together in blender.

Blend until smooth. If it appears too thick, add a splash of water or more coconut milk and blend further.

Once blended, add in shredded coconut and mix together with a spoon. This will give your 'creamsicle' some additional texture.

Pour into freezable molds and freeze for 3-4 hours, or overnight.

I hope you get a chance to test this recipe out for yourself and see that healthy eating can be simple and taste great too. I love being able to support people in creating healthy eating routines that they love! If you have any recipe requests, please send them my way!

Cheers to happy and healthy eating! :)

Until next time,

Eat Right Feel Right- Angela XO
