Sweet Potato 'Noodle' Dish

Ever since I got my starfrit spiralizer I have become obsessed with spiralizing vegetables. So far, I have created spiral 'noodles' using peppers, cucumber, carrots, and most recently sweet potato. I decided to test out a sweet potato noodle side dish using some of my favourite Asian cuisine flavours (and I absolutely loved it).

Give this quick recipe a try, I promise you won't be disappointed.

Side note: many grocery stores now sell pre- spiralized veggies (I have seen beets, sweet potato, and zucchini at my local grocery store).


2 small sweet potatoes

2 tbsp. sesame oil

1 small onion, minced

2 tsp. ginger, minced (or paste)

1 1/2 cups cooked edamame beans

1 tsp. chili pepper flakes

2 tsp. sesame seeds (optional topping)


Spiralize sweet potatoes (I used a thin spiral option). They will feel somewhat moist, so be sure to pat dry with a cloth. Your other option is to purchase a small container of spiralized sweet potatoes.

In a heated pan, add sesame oil, onion, and ginger. Sauté for 1 minute to build flavour. Add sweet potato noodles, chili flakes and any other desired seasoning, sauté for an additional 5 minutes, until they soften (but don't break apart or lose form).

Add in pre-cooked edamame beans and sauté for an additional minute.

Remove from heat and top with sesame seeds.
