My post today is inspired by the FALL season. It is my absolute favourite season, there is something so magical about the colours, crisp air, and fall foods. For some reason all those things make me crave PUMPKIN. I mean who doesn't love pumpkins, they are so versatile! You can eat their seeds, decorate them for Halloween, use their insides for baking and cooking, and even use them as flower centerpieces (I am doing that next week, and I will share some pictures). Below are two pumpkin recipes. My pumpkin pie smoothie (delicious and nutritious) and simple roasted pumpkin seeds. I hope you give them a try and enjoy some fall pumpkin goodness. You can even use the pumpkin seeds post pumpkin carvings! Pumpkin Pie Smoothie: Ingredients:
1 scoop vanilla protein powder
3 heaping tablespoons pumpkin puree
1 tsp. cinnamon or pumpkin spice
1 cup almond milk or milk of choice
1/2 teaspoon vanilla extract
Directions: Blend together and enjoy. Sprinkle with some additional pumpkin spice or cinnamon for added flavour.
Simple Roasted Pumpkin Seeds: Ingredients:
2 cups pumpkin seeds
2 tablespoons butter or olive oil (if using butter be sure to melt)
2 teaspoons garlic powder
1/2 teaspoon salt
1 teaspoon cracked black pepper
Directions: If using pumpkin seeds from a pumpkin be sure to lay them flat on a baking sheet to air dry before roasting Preheat oven to 350 F Toss seeds in a bowl with melted butter (or olive oil), garlic powder, salt and cracked black pepper Spread the seeds on a baking sheet (can be lined with tin foil). Cook for 20-30 minutes or until golden brown. Ps. I also wanted to share a beautiful picture I took the other day in Terra Cotta (Caledon area). It is such a beautiful place, I just had to pull over. This is why I love fall so much. It can be so mesmerizing and it always reminds me why it's important to appreciate the small things.
