Pineapple Coconut Cookies

It may be raining but I am feeling the sunshine with these sun inspired cookies. I have always loved the pineapple coconut combo (especially in my moms pineapple delight cake), so I thought why not try it out in cookie form!

I hope you enjoy these cookies as much as I do.

Makes 12 cookies Ingredients:

1 + 1/4 cup quick oats 3/4 cup spelt or whole wheat flour 2 tbsp. hemp seeds 1 tsp. baking powder Sprinkle of salt 1 tsp. cinnamon 2 eggs 3 tbsp. coconut oil, melted 1/4 cup shredded coconut 1/2 cup shredded or chunked pineapple (add an additional 1/4 cup if you want more pineapple).

1/4 cup honey . Directions:

Preheat oven to 350F In a bowl, mix all dry ingredients together. In a separate bowl mix eggs, pineapple, coconut oil, and honey. Pour liquid mixture into dry. Using 1-2 tbsp. form small balls of dough (dough will be sticky). Place on parchment lined tray (or I used my stoneware cookie sheet) and slightly flatten with your hand. Bake for 20-25 minutes or until a light golden brown. . Enjoy! 😋
