Chewy Oatmeal Pumpkin Cookies

If you've been following the Eat Right Feel Right blog or social media pages for a while now then you know I am the queen of treats....healthy treats of course. I love nothing more than a warm cookie fresh out of the oven. I love it even more when the freshly baked treat is actually healthy too! So, I have made it my mission to create incredibly delicious but also healthy treats. 

 

I typically like to recipe test on a Sunday, unfortunately if my meals or goodies don't turn out good my family gets stuck eating them. I don't like to waste food, so it's a good thing I have a dog who loves everything I make.

Today was big success because these cookies turned out amazing. I should mention they are totally fall inspired, meaning they contain 1) pumpkin, 2) pumpkin spice, and 3) I baked them in my furry socks (yes I already have them out). 

 

 

Give them a try and enjoy the delicious fall flavours.

 

Makes 12-14 cookies

 

Ingredients:

  • 1 cup rolled oats

  • 3/4 cup almond flour

  • 1 tsp. baking powder

  • 1-2 tsp. pumpkin spice

  • Sprinkle of salt

  • 1/2 cup roasted pumpkin seeds (without shells)

  • 2 tbsp. butter, melted

  • 1 egg

  • 1 tsp. vanilla extract (optional)

  • 2-3 tbsp. maple syrup

  • 1/2 heaping cup pumpkin puree

  • 1/3 cup dark chocolate chips

 

Directions:

Preheat oven to 350 F

In a bowl mix together oats, almond flour, baking powder, salt, pumpkin spice, and pumpkin seeds.

In a separate bowl, whisk egg. Mix melted butter, pumpkin, maple syrup, and vanilla extract in.

Pour wet mixture over dry and mix together well. The batter will be thick.

Fold in dark chocolate chips.

Line baking tray with parchment paper and take approximately 1 tbsp. of cookie dough and place on baking tray. Use the palm of your hand to gently flatten it.

Bake for 12-14 minutes or until slightly browned.

Notes:

Can substitute almond flour for whole wheat or spelt

Can substitute butter for coconut oil

Can substitute chocolate chips for raisins

13g carbs

5g protein

2g fibre

5g sugar (natural and added)
