I love to experiment in the kitchen, I actually consider cooking and baking a hobby of mine. So naturally I also love potlucks. A few weeks ago I went to potluck and brought this salad, which turned out to be a big hit. I had thrown a lot of the ingredients together so it took me some time to recreate the exact combination and share the recipe, but here it is (finally)!
This salad is colourful, tasty, and loaded with all the good stuff (antioxidants, fibre, healthy fats, and protein). It's vibrant colour and fresh taste make it the perfect summer dish. It also holds well for 2-3 days, so make extra and pack some for lunch.
