Raspberry Oatmeal Cookies

Having an ice storm in the middle of April is the perfect opportunity to bake and keep cozy (especially on a Sunday). I am completely obsessed with these cookies....let's just say they didn't last very long in my house.

These chewy oatmeal cookies are not only tasty but filled with healthy fats and fibre. The best part is they have very little added sugar.

 

 

 

Makes 10-12 cookies

 

Ingredients

  • 1 cup quick oats

  • ½ cup spelt flour or whole wheat flour

  • 1 tsp. baking powder

  • 1 tsp. cinnamon

  • Sprinkle of salt

  • 3 tbsp. hemp seeds

  • 2 tbsp. coconut oil, melted

  • 1 egg

  • 1 tsp. vanilla extract

  • ¼ cup maple syrup

  • ½ cup dark chocolate chips

  • ½ cup raspberries (or blueberries), mashed

 

Note: I used frozen raspberries, let them thaw and then mashed them with a fork, so they become similar to jam

 

Directions:

 

Preheat oven to 350F

In a bowl combine, oats, spelt flour, hemp seeds, cinnamon, salt, and baking powder. Mix well.

In a separate bowl mix wet ingredients (raspberries, egg, maple syrup, vanilla, coconut oil).

Combine dry and wet ingredients, mix together well.

Fold in dark chocolate chips. The dough should be wet.

 

Take 1-2 tbsp. of mixture and place on a parchment lined baking tray.

 

Bake for 12-13 minutes.
