Raw Kale Avocado Soup

Summer has arrived, the sunshine and heat always make me crave cold foods and drinks, like ice cream or fresh watermelon. But let's face it, we can't eat ice cream all day long, although we may want to. 

One of my favourite comfort foods is soup (not so cold and refreshing). To help make my favourite comfort food more suitable for warm weather I have created a delicious raw soup recipe (that can be eaten chilled).

This recipe is perfect for lunch or dinner on a warm summer day. Give it a try and let me know what you think. Cold soup may sound strange, but I promise this is as delicious as it is nutritious! 



Serves ~ 4



  • 2 cups kale (stems removed)

  • 1 cucumber, sliced

  • 1 ripe avocado

  • 1.5 tbsp. olive oil

  • 2 tbsp. lemon juice

  • Salt and black pepper to taste

  • 3 cloves or garlic, finely minced

  • 1.5 cups water

  • 1-2 tbsp. honey

  • 1 tsp. fresh ginger, minced 

  • Fresh parsley or kale (for garnish)



Combine all ingredients in a blender and blend until smooth. If you want to make it less thick, add more water. Adjust seasoning as needed.

Garnish with some fresh parsley, basil, ripped kale leaves, or croutons.
