Quick Veggie Stir Fry

I love making good food taste delicious. I love it even more when it is quick and easy to make. Here is a quick and easy stir-fry that tastes like take-out (amazing). I seriously can't get enough! It is also loaded with veggies and lean protein, providing you with nutrients such as vitamin C, fibre, vitamin A, and lots of fibre!

Serves ~3-4. I like to double the recipe so I have lots of leftovers for lunches or other busy weeknight dinners!

Last night's quick dinner meal (and picture).

Ingredients:

500 g ground turkey

1 bag Mann's veggies (I used a cabbage, kohlrabi, golden beet, and kale blend - but feel free to use any blend)

1/3 cup coconut aminos (soy substitute, option to use a light soy or tamari instead).

3 tbsp. sesame oil

1 onion, chopped

4 garlic cloves, minced

2 tsp. grated ginger

1 tbsp. chili flakes (optional)

2 cups quinoa (uncooked)

Directions:

Cook quinoa according to package directions and set aside.

Heat sesame oil in pan and add ground turkey and brown (~3 minutes). Add chopped onion, minced garlic, ginger, and coconut aminos.

Continue to cook on medium heat for 7-10 minutes.

Add veggie mix and let cook until the veggies begin to wilt. Add an additional squirt of coconut aminos if needed and chili flakes.

Remove from heat and enjoy over qunioa! :)

* You can use any vegetables you like (including anything floating around in your fridge). I used the pre-bagged Mann's mix because it was was super easy and I like their blends!
